Coconut Drops

Saw this made on Diner Drive Ins & Dives, one of my favorite shows.  Should not watch this show because it always makes me so hungry.  Such great looking food all over the country.  This is the recipe:

Ingredients

·                                 2 cups diced fresh coconut, from 2 to 3 fresh coconuts.
·                                 1 1/2 tablespoons grated fresh ginger
·                                 1 pound light brown sugar
·                                 1 teaspoon vanilla extract
·                                 Pinch kosher salt
·                                 1/2 to 3/4 cup water

Directions

Put all the ingredients into a heavy-bottom saucepan, with just enough water so the coconut will cook. Boil the mixture until it becomes very sticky, about 20 to 30 minutes. Remove from heat, and beat with a wooden spoon for a few minutes. Then drop by the spoonful onto a greased or parchment lined baking sheet to cool, about 30 minutes.

Wish I had a picture to show you....it's so yummy looking.  A Jamacan treat.

My New Oven

A friend of mine got this Nu Wave Oven for me for Christmas and it is the easiest cooking I have ever done and the meats always turn out very juicy.

A countertop oven that will have you cooking at the speed of light...
The NuWave Oven can cook up to a 10 lb turkey or a 8 lb ham. It will cook up to 50% faster and uses up to 85% less energy, than your conventional oven. You'll no longer have to waste time and money pre-heating your large oven, plus you can cook from frozen to fabulous, so there is no defrosting required. Foods cooked in the NuWave Oven are healthier, too. There are no additional fats or oils required, foods cook quickly and evenly, sealing the natural juices and removing more unwanted fats.

You can find out more about it at their site.

Favorite Movie Of All Time

I'm a sucker for a good love story and this one is my all time favorite called: Somewhere In Time starring Christopher Reeves and Jane Seymore.  I could just listen to the theme song over and over because of how beautiful it is.  Below is the original soundtrack.

There are a lot of good scenes in this movie which is about a man who sees a picture of a woman at a hotel and falls in love with the picture and remembers an old college professor had mentioned and wrote a book that he thought time travel was possible. Down below is a very popular scene from the movie.

The next video is one of the reunions they have every year at the Grand Hotel where it was filmed on Macinac Island in Michigan.

They only had 4 million dollars to do this movie so they had to find people that would work for peanuts compared to what other big time movies were paying at the time.  Jane Seymore suggested John Barry for the music and they said they could not touch him for what he would cost.  She said.."He is a close personal friend and I will talk to him."  He did it for a fraction of his normal fee and the rest is history.

A Little About Me

Ok, here goes, I have started my first blog because of having lots of time on my hands and my daughter Kerris blog has always fascinated me.  My health and mobility are not to good so spend lots of time on computer and watching tv and this will give me something to do.

I was married for almost 22 years before getting a divorce and have two wonderful daughters, Kerri & Meghan two great son-in-laws, Eric & Tony and one grandchild Brady. I also have a brother Jim in Wisconsin and his wife Bev and my two nephews Brad & Brian.

My best friend's name is Walt.  He is a retired school teacher and also a free lance photographer.  We hang out once or twice a week at a small restaruant.  Summer time we go for drives down around Mohican.

I have a passion for my sports teams....The Ohio State Buckeyes, Cleveland Indians and Green Bay Packers.

Enough about me, I will try and make this blog interesting as I can and it will be a learning experience.
